Carla's Poppy Seed Chicken

  • 4 boneless skinless chicken breasts
  • 16 oz container of Sour Cream
  • 1 can of cream of chicken soup
  • 1 tube of Ritz crackers
  • 1 Table Spoon poppy seeds
  • 1 Stick of Butter

Before you leave on your trip, boil the chicken breasts until fully done and chop them into small chunks. You can now refrigerate the chicken until you are ready to make the casserole.

Preheat oven to 350 degrees. Mix sour cream and cream of chicken soup together. Add the chicken to the mixture. Put the mixture into a casserole dish.

Crumble package of Ritz crackers into small pieces. Melt 1 stick of butter in the microwave. Add crushed Ritz and poppy seeds to the butter.

Sprinkle cracker mixture over the top.

Bake 30 minutes, until crackers are golden brown. If you have refrigerated the chicken it may take longer to bake.

Serve and enjoy!


Omelet in a Bag

  • Write names on quart size self locking freezer bags
  • Crack two large eggs into the bag, shake, mixing them well
  • Put out a variety of ingredients (cheeses, ham, onion, green pepper, tomato, hash browns, salsa, whatever is left in the kitchen)
  • have each person add the prepared ingredients of their choice into the bag and shake
  • make sure to get the air out of the bag and zip it up
  • place the bags into rolling-boiling water for exactly 13 minutes
  • open the bags, and the omelet will roll out easily
